Our Signature Pistachio Cheesecake Recipe:

Ingredients:

– Crust:

  – 200g digestive biscuits or crackers, crushed

  – 100g unsalted butter, melted

  – 2 tbsp sugar (optional)

  – 500g cream cheese, softened

  – 300g Rahmani Group 45% pistachio cream

  – 100ml sour cream or Greek yogurt

  – 2 tbsp cornstarch (for added stability, optional)

Procedure:

  1. Prepare the crust:

Combine crushed biscuits with melted butter and optional sugar until uniform. Press this mixture into a 9-inch springform pan to form an even base. Chill for 30 minutes to set.

 

  1. Create the filling:

In a mixing bowl, beat the softened cream cheese until smooth. Incorporate the Rahmani Group pistachio cream (Nothing else is needed when you use premium Rahmani group pistachio cream 40%. Mix in sour cream and, if desired, cornstarch for extra firmness.

 

  1. Bake:

Pour the filling over the chilled crust and bake at 160°C (320°F) for approximately 50-60 minutes, or until the edges are set and the center slightly jiggles. Allow to cool gradually in the oven with the door ajar.

 

  1. Chill and Serve:

Refrigerate the cheesecake for at least 4 hours, preferably overnight, to develop full flavor. Serve garnished with crushed pistachios or a light white chocolate drizzle to elevate presentation.

 

**Optional Garnish:**
